Free of eggs, sesame, peanuts, tree nuts, shellfish, soy
1 large sweet or white potato (peeled and cubed)
1 package turkey cutlets (cubed)
1 onion (diced)
Carrots (diced)
Frozen peas
Garlic, oregano, basil, salt and pepper to taste
Water
Flour
Biscuit dough without sugar (see recipe)
Place potatoes, turkey, onion, carrots, peas and seasoning in a large soup pot. Add just enough water to cover the ingredients. Cover the pot and boil until the turkey is cooked through and the vegetables are tender (at least 1 hour). Check regularly to make sure that enough water remains to cover the contents of the pot. Once cooked, remove the cover and slowly add flour, stirring constantly, until the water thickens into a sauce. Drop spoonfuls of biscuits into the pot, covering the surface in a single layer. Cover the pot and boil until the biscuits have cooked (cooked biscuits will lose their stickiness and become spongey). Serve warm.
Servings: 8 – 10 ($1.50/serving)
