How To Use The Site
We know that cooking allergy safe food is just one of a million things that you have to think about. That's why we want to make this site simple and helpful. To use the site:
1. Click on the Allergen List PDF at the bottom of this page for a complete list of our recipes and their allergens.
2. Select a recipe that looks good to you.
3. Check to make sure that the recipe is allergy safe (an “X” means that the recipe is not safe for people who react to the allergen at the top of that
column).
4. Click on the Recipes page, choose the appropriate food category, and open the recipe you want.
5. A PDF of each recipe is available at the bottom of the page for easy printing.
6. Cook the recipe as it is written or use it as inspiration for your own meal.
One final thing about our recipes – they come straight from our kitchens to yours. That means that we have more recipes that are safe for our family’s allergy needs than for families who have to avoid wheat and dairy (so send me your recipes). This also means that the recipes themselves have inherited some of our cooking quirks, such as sweetening with honey and maple syrup. The two most important things to be aware of are:
· For health reasons, we use primarily olive oil. For stir-fry type dishes we use regular olive oil and for baking we use mild-tasting olive oil. Feel free to
substitute other oils as needed.
· Our family is half-Czech, as in “half of our family lives in the Czech Republic and grew up there.” As a result, you will
see some Czech influences in the recipes. One of those influences is the use of Vegeta (a Central/Eastern European seasoning mix). We use Vegeta in almost all of our soups, though alternative seasoning options are always
suggested. If you would like to buy Vegeta, look for it in stores with a heavy Central and Eastern European inventory,
or purchase it online. Please be careful with the ingredients, though. Vegeta contains some ingredients that may not
meet your allergy needs (MSG, etc.)
