5 small sweet potatoes
2 cups of uncooked lentils
6-8 cups water
2 bay leaves (optional)
Salt, pepper and garlic to taste
Bring 6-8 cups of water to a boil in a large soup pot. Meanwhile, chop the onion and potatoes into small pieces. Add the potatoes, onion, lentils and seasoning to the soup pot. Boil for at least 30 minutes or until the lentils and potatoes are tender. Serve warm.
