Pinwheel Jam Cookies

Free of eggs, sesame, peanuts, tree nuts, shellfish, soy


1 cup flour

1 cup oil

1 cup plain Greek yogurt (plain)

Jam of choice

 

Preheat the oven to 400 F and grease a cookie sheet. Combine the ingredients, mixing until they form a smooth dough. Turn the dough onto a well-floured surface and roll into a rectangle that is 1/8 inch thick. Using a sharp knife, cut the dough into 4X4 inch squares. Place a spoonful of jam in the center of each square and fold the corners over, pinching them together to seal. Place them on the cookie sheet and bake for 8 to 10 minutes. Let cool on a baking rack. While the pinwheels are still warm, coat them with powdered sugar.
